So, you can tell I like strawberries, right?! They are so packed with nutrients and antioxidants and low in sugars that I can’t resist creating with them when they are in season. And where they are not – there is always the freeze-dried kind.

This recipe is

  • made with only 3 ingredients
  • can be mixed into natural yoghurt to make a more natural flavoured yoghurt
  • is super sweet
  • can be made in one pot – well, a blender!

What to do:

1 cup strawberries,
1 tbs chia seeds,
1.5 tbs liquid sweetener of choice (etc maple syrup/date paste),
90ml water
I used freeze-dried strawberries which make this process EVEN faster so that you can spend more time enjoying this jam rather than making it!

What to do:

Mix all of the ingredients except the strawberries in a bowl and set aside for 5 minutes. Crush strawberries and stir in. If using fresh strawberries you may not need any water at all.
