It’s most certainly summertime! So, I have created a spin on the classic British tradition of strawberries and cream. I adore strawberries (who doesn’t right?) which are supercharged with antioxidants, phytonutrients and flavonoids. These gorgeous red berries are also low in sugars and carbohydrates. So lovely and easy to snack on too!
Strawberries & Cream are the traditional treat associated with Wimbledon. But whether you’re interested in the tennis or not then this time of year is a great excuse to enjoy some strawberries with cream!
This amazing Strawberries and Cream Overnight Oats recipe as part of my vegan and gluten free recipes range is so flavourful, rich, creamy and indulgent. This creamy strawberry pudding is delicious. The bonus is, it is also gluten free. Checkout the rest of my recipes here.
My creamy overnight oats are:
- packed with healthy fats (lauric acid/MCT fatty acids) to keep you fuller for longer
- full of antioxidants (to protect the body from free radical damage)
- rich in vitamin C, K and other trace minerals
- made with only 5 ingredients!
What you will need:
1 cup oats
1.5-2 cups coconut milk
6 large strawberries* (pretty much 1 punnet. Organic preferably)
1tsp date paste
1/5 tbs chia seeds
If organic, keep the hulls on for added green goodness.
What to do:
Blend all the ingredients, excepts the oats. Add the oats to the creamy mixture. Pour into cups / bowls and pop in the fridge overnight. Garnish just before you are ready to eat (I use berries, coconut flakes and seeds). Yummy!
Makes enough for 2 kiddies (more over on my education site) or a very hungry adult.
